Quinoa Stir Fry

2 chicken breasts, diced
1 cup quinoa
1 green bell pepper
1 red bell pepper
1/2 cup chopped broccoli
1/2 cup chopped cauliflower
1/2 cup peas in pod
1/4 cup frank's red hot sauce (xtra hot)


Basically, cook the chicken in strips or chunks or whole or whatever, then dice them once they are done.


1. Boil 2 cups of water, add quinoa, simmer. Add hot sauce. (cook for 12-15 minutes or until the germ separates, it will look like there is little hairs coming out of the grains)
2. Heat 2 tbsp oil in a large pan and add all of the vegetables and stir fry them up a bit.
3. Add chicken to the vegetables once it is cooked and diced.
4. Just before the end of cooking, add cooked quinoa to vegetables and chicken.


God damn, that is one delicious quinoa stir fry. Enjoy.
